Prepare kvass ingredients. Sort the raisins, but do not wash them - they already have bacteria on them that will start fermentation. Boil water and cool to about 40 degrees. Pour into a 3-liter jar.
Add sugar and stir until dissolved. Add chicory and dry yeast. Add lemon juice and stir. Add prepared raisins. Close the jar with a lid.
Leave the jar in a warm place for 3 hours. After this time, strain the kvass into a clean jar through 2 layers of gauze. Cover it and put it in the refrigerator until serving.
