Prepare two two-liter strawberry jars. Wash them thoroughly with degreaser or baking soda. Pour boiling water over the inside several times. Turn out onto paper towels and let dry.
Sort the strawberries, rinse carefully with cold water, then dry well on paper towels. Remove the stems and sepals from the berries. Place in layers in jars, sprinkling with sugar.
Spread cognac on top. Cover each jar of strawberries with a circle of parchment and secure it loosely with a lid or tie it with kitchen string. Refrigerate for 8 days.
Sterilize small jars in any convenient way. Place strawberries and cognac on them and roll up the lids. Store in a dry and dark place (optional in the refrigerator).
