Milk whole - 60 ml
Glucose syrup - 60 ml
Fine crystalline sugar - 20 g
Fine salt - 0.3 tsp
Chopped walnuts - 50 g
Dark chocolate - 50 g

1 hour before you start making ice cream, place a metal baking dish with a capacity of about 2 liters in the freezer.
Chop the chocolate and walnuts into small pieces.
Mash the bananas into a homogeneous puree.
Using a whisk or in the bowl of a food processor, whisk together the condensed milk, mashed bananas, milk, glucose syrup, sugar and salt until smooth.
Beat the cold cream with a mixer until stiff peaks form. Using a silicone spatula, combine the cream and banana mixture. Gently stir in the chocolate and nut pieces.
Transfer the mixture to a cooled pan, cover with cling film and place in the freezer for at least 6 hours.
Spoon ice cream into bowls and garnish with chocolate shavings and nuts.
