Cheese flatbreads are the perfect dish to serve for breakfast. They are cooked in a regular frying pan, and it’s very quick. These flatbreads are sometimes called lazy khachapuri because cheese, spices, and herbs are mixed directly into the dough. Usually, cheese flatbreads are made with sour cream or kefir, but if you want to reduce the calorie content of your breakfast, use skim milk. And if you replace wheat flour with rice or buckwheat flour, such a cheese flatbread will be suitable for those following a proper diet (PP). Step 1

Remove all food from the refrigerator. In order for the ingredients to mix well and without lumps, they must be at approximately the same (room) temperature.

Take a deep bowl. Break the eggs into it and pour in the kefir. Mix vigorously with a whisk. Eggs and kefir should combine into a homogeneous mass. You can use a mixer, but do not overdo it - no foam is needed.

Mix flour with baking powder and sift through a sieve. This will enrich it with oxygen, and the cake will turn out more fluffy. Pour the flour into the egg-kefir mixture and stir until smooth. Set aside for 5-10 minutes - the ingredients should begin to interact with each other.

Grate the cheese into a separate small bowl. Semi-hard and hard varieties are suitable. Based on your own preferences. Wash and finely chop the greens. You can choose one herb, for example, parsley. Or you can make a mix of several herbs.

Add grated cheese and chopped herbs to the present dough. Mix well. If desired, add salt, ground black pepper or any other spices to your taste.

Take a frying pan with a thick bottom (diameter 24 cm). Pour in vegetable oil and place on high heat. Let the oil heat up. Reduce heat to medium, pour batter into pan and cover with lid.

Bake the cheesecake for about 5-7 minutes. Then flip and bake for another 5-7 minutes on the other side. Cover the pan with a lid so that the cake is well baked inside. Do not make the heat very high, otherwise the dish may burn.
