How to make dumplings with liver? We explain in detail! First, of course, we make the dough from flour, water, and egg. The main task at this stage is to knead the dough thoroughly. Initially, it will be stiff, but after resting, it will become softer and more elastic. While the dough is "resting," you can prepare the filling. Take good quality beef liver, clean off the membranes, chop, and fry it together with onions. Not for too long, otherwise it will become too tough! After that, pass it through a meat grinder and stuff the dough circles as recommended in the recipe. Shape the dumplings, cook them in boiling water, and finally, taste them with pleasure!

Prepare the dough for dumplings. Sift flour and salt into a bowl. Make a depression in the center. Beat an egg into it, pour in water and vegetable oil.
Knead and knead the dough thoroughly. It should become plastic and acquire a homogeneous consistency (at least 10 minutes by hand). You can use a mixer with special hooks.
Form the dumpling dough into a ball, wrap in cling film and leave at room temperature for 30 minutes. During this time, gluten will develop in it, and it will not tear when rolled out.
Prepare the filling for dumplings. Wash the liver, peel off the films and cut into medium-sized cubes. Peel the onion, cut in half, then roughly chop.
Heat vegetable oil in a frying pan. Place the liver along with the onions. Stirring, fry over medium heat for 8 minutes. Remove from heat and let cool.
Pass the cooled liver, fried with onions, through a meat grinder with a fine grid or grind in a food processor with a knife attachment. Add frying liquid. Add salt and pepper to taste and mix thoroughly.
Place the dough for dumplings on a table dusted with flour and roll out into a thin layer. Using a cookie cutter or thin glass, cut out circles with a diameter of about 7 cm.
Place the liver filling among the dough circles. Fold each one in half and pinch the edges with wet hands. Cook the dumplings in batches in boiling salted water (4 minutes after rising to the surface).
