Homemade PP-shawarma with chicken in flatbread is exactly one of those cases when healthy food is also delicious. And if you get to know our recipe and bring it to life, you will have exactly such a dish in your collection. Many, of course, will doubt that shawarma can be healthy at all, but if you approach the matter wisely, you'll get exactly what you need. We suggest baking the chicken in foil instead of frying it, making the sauce based on natural yogurt instead of mayonnaise. Complement the chicken with fresh vegetables, wrap it in a thin flatbread sheet, and enjoy a dietary PP-shawarma that rivals the best samples of Istanbul street food.

Prepare the ingredients of PP shawarma in pita bread. Dry the chicken fillet well. Salt, pepper, season with herbs and paprika. Rub the spices into the chicken.
Preheat the oven to 200°C. Place the prepared chicken fillet on a sheet of foil, gather the edges at the top so that there is a small hole. Pour some warm water into it (a couple of tablespoons). Bake for 35 minutes.
Remove the chicken from the oven and let it cool in the foil for 10 minutes until it is warm. During this time, prepare the other shawarma ingredients: vegetables and lettuce.
Wash the cucumbers and tomatoes for shawarma, then dry. First cut the cucumbers into long and thin longitudinal slices, and then into strips.
Cut the tomatoes in half. If there is too much juice and pulp in the fruit, remove it with a spoon. Cut the remaining portion into strips the same size as the cucumbers.
Peel the red onion for shawarma and cut into rings. Pour in lemon juice and stir gently. Wash the lettuce leaves and dry well with paper towels.
Prepare the shawarma sauce. Place natural yogurt in a bowl. Add tomato sauce and mustard. Salt and pepper to taste. Mix thoroughly.
Cut the warm chicken into strips the same size as the cucumbers and tomatoes. Place sheets of pita bread on a work surface. Brush half of each with the resulting sauce, leaving about 7cm of free edges.
Distribute lettuce leaves, prepared onions, cucumbers, tomatoes and chicken on the sauce. Fold the edges of the lavash sheets inward and wrap the filling so that it is all “sealed.”
Fry the shawarma one at a time in a dry grill pan on all sides. Serve immediately. You can cut each shawarma in half to make it easier to eat.
