Fish soup with cream is very reminiscent of Finnish lohikeitto, the recipe for which is almost identical to ours. It turns out to be a very tender, delicious, and warming first course. First, a broth is cooked from trout in a pot, then vegetables are added to it (onions sautéed in butter with carrots and diced potatoes), and at the very end, cream is poured in, giving the soup a special elegance. Whether or not to add a bay leaf, which is considered nearly essential in our first courses, is a matter of personal taste preferences. Just remember to add it at the very end for about five minutes, then remove it to avoid bitterness in the dish.

Prepare the soup ingredients. Wash the fish, remove the skin. Separate the pulp from the bone and cut into cubes. Place in a bowl, cover with cling film and refrigerate until ready to use.
Place the skin and bones of the red fish in a saucepan. Pour 1.5 liters of cold water and bring to a boil. Remove the foam with a slotted spoon. Cook over low heat for 40 minutes. Strain through a fine sieve into a clean saucepan.
Peel the onion for soup and chop finely. Peel the carrots, wash and grate on a coarse grater. Heat vegetable oil in a frying pan. Add the prepared vegetables and fry, stirring, over medium heat for 7 minutes.
Bring the strained broth to a boil. Peel the potatoes, wash and cut into cubes. Place in a colander and rinse. Add to broth along with fried vegetables. Cook over medium heat for 5 minutes after returning to a boil.
Add pieces of red fish to the broth with vegetables. Bring to a boil and cook for 10 minutes over medium heat. Pour in the cream. Bring to a boil again. Season with salt and pepper. Cook the soup for 5 minutes.
Wash the dill, dry it, remove the rough stems. Finely chop the remaining greens. Pour the fish soup with cream into bowls. Add dill to each.
