Zucchini pasta with tomatoes and mushrooms will make a unique side dish for meat or a standalone dish. For many years, Europeans grew zucchini in their gardens solely for decorative purposes. They admired the beautiful fruits without realizing that they could be eaten. Once zucchini was finally sampled and people began experimenting with its preparation, a multitude of recipes emerged. In addition to main dishes, zucchini is used to make desserts: jam, candied fruits, marmalade, as well as bread and pizza! In this recipe, we suggest you make a low-calorie and healthy pasta that can replace traditional pasta.

Heat a frying pan over medium heat, add vegetable oil. Cut the garlic into small cubes or pass through a press. Fry for 1 minute, stirring continuously.
Cut the champignons into slices. Add the garlic to the pan and cook for 4-5 minutes over high heat until the mushrooms release their juices and it has evaporated. Next, turn down the heat a little again.
Peel the tomatoes (to make it easier, you can pre-dip them in boiling water for 1 minute and then keep them in cold water for a little while). Cut them into cubes. Add the champignons to the frying pan, add sugar (to neutralize the acid) and cook for 3 minutes until soft.
If you have mature zucchini with thick skin, peel it and remove the seeds. If they are young and have thin skin, then you don’t need to do anything, move on to the next step.
Using a Korean carrot grater, chop the zucchini into long strips. If you don't have such a device, cut the zucchini into thin slices and then into thin strips.
Add the zucchini to the pan with the tomatoes and mushrooms. Add some salt. Cook over medium heat for 6-7 minutes until soft. But don’t overcook – they should remain slightly crispy inside.
Serve the prepared zucchini pasta with tomatoes and mushrooms hot. At your request, the pasta can be sprinkled with pepper, paprika, herbs or finely grated cheese.
