Corn porridge with semolina is a real find for those who can't imagine their breakfast without a bowl of hot porridge when all the usual recipes have become tiresome. The idea of cooking porridge from a mix of grains is not new, but very interesting – after all, the combinations can be endless! Even in our recipe, you can vary the proportions – increasing the amount of one grain and decreasing the amount of the other accordingly. Each time, you'll get a new taste. Corn grits will give the porridge an interesting texture and a pleasant color, while semolina will add softness and tenderness. Add some berries, drizzle with honey or any syrup, and your breakfast will burst with vibrant colors!

Boil 250 ml of water in a thick-bottomed saucepan and add a pinch of salt. Add corn grits and cook over low heat for 12-15 minutes.
The corn grits should absorb almost all the water and swell, and the whole mass will thicken greatly. Stir the porridge with a spoon or spatula, otherwise the porridge will start to burn.
Pay attention to the degree of grinding of corn grits. It can vary from 1.2 to 0.7 mm. For coarser grains, you will need to increase the cooking time to 20 minutes.
Pour milk into the pan, add sugar and mix thoroughly. Continue cooking over low heat until the porridge comes to a boil. Stir the porridge constantly.
Pour semolina into the pan in a thin stream. Cook without stopping stirring the porridge and not allowing lumps to form. Semolina cooks very quickly, so it is enough to cook it for 2-3 minutes.
Add butter to the pan with porridge and stir again. Cover the pan with a lid, remove from heat and leave the porridge on the edge of the stove for 5 minutes. During this time, the porridge should steam.
If the porridge seems too liquid, cook it for another 3-5 minutes. If, on the contrary, the porridge is too thick, add 2-3 tbsp to the pan. l. hot milk and stir.
Place the finished porridge on plates or small bowls and serve, garnished with fresh berries or fruit jam, and topped with liquid honey or syrup of your choice.
