Prick the finished panettone and hang it upside down overnight to cool and maintain its fluffiness.
Prepare the overnight starter: combine flour, milk, sugar, and yeast. Leave in a warm place, covered with plastic wrap, overnight. Feel the magic being born in this simple mixture.
