Lula kebab made from beef on the grill is a signature recipe of Caucasian cuisine. Any dish cooked over fire evokes delight and the immediate desire to say an elaborate toast, and then linger at the table for a long time, enjoying the delicious food.

Cut the veins and membranes from the beef. Pat the meat dry with paper towels and cut into small pieces. Place in a bowl and place in the freezer for 20 minutes. Slightly frozen meat will be easier to grind into mince.
Cut the peeled onion into small cubes. Cut the beef fat into small pieces. Pass the meat, onions and fat through a meat grinder with a large grid.
Salt the resulting minced meat, season with ground black pepper, paprika and dry adjika. Stir the minced meat with a spatula so that the spices are evenly distributed.
Gather the minced meat into a ball. Place a large board on your work surface and toss the mince onto it for 1 minute. After beating, the minced meat acquires a smooth texture and will stick well to the skewers.
Cover the bowl with the prepared minced meat with cling film. Place the bowl in the refrigerator for 1-2 hours. This step is mandatory - during this time the minced meat will acquire the necessary viscosity and it will be possible to easily form lula kebabs from it.
Light the coals in the grill and let them heat up for 10 minutes. The coals should turn red and then turn to white ash. Grease the grate with vegetable oil and place on the grill.
Wet your hands with warm water. Take a lump of minced meat the size of a large apple (about 200 g). Form into a narrow cake and press onto a skewer. Continuing to press the minced meat, pull it along the skewer, forming a sausage.
Similarly, form lula kebabs on skewers from the remaining minced meat. At the top and bottom ends of each kebab, firmly press the minced meat onto the skewer again, forming so-called locks - they will not allow the meat to slip into the hot coals.
Loosely arrange skewers with lula kebabs on the prepared and heated grill. The distance between the lula kebabs should be at least 1.5 cm. The grate should be at a height of about 10 cm from the hot coals.
Fry the lula kebabs for 10 minutes until they are golden brown. Turn the skewers on different sides every 15-20 seconds so that the meat cooks evenly.
