Turkey liver pancakes are a very tasty and nutritious dish. Moreover, they are a treasure trove of useful substances! They contain a whole set of microelements and vitamins - selenium, zinc, iron, phosphorus, and copper, as well as vitamins A and E, and all representatives of the B vitamins. It turns out that in just half an hour, you can serve a simple-to-prepare and wonderfully healthy meal! As for their taste, there shouldn't be even a shadow of doubt – liver pancakes always turn out juicy, browned, and appetizing!

Place the liver in a deep bowl, cover with water and let stand for 10-15 minutes. Then drain the water, place the liver in a colander and rinse thoroughly with cool water. Let the liquid drain or dry the liver with paper towels.
Grind the liver in a way convenient for you - beat until smooth with an immersion blender, pass through a meat grinder with a fine grid, or simply chop finely on a board with a knife.
Place the prepared minced meat into a bowl. Sift the flour through a fine sieve and add to the minced meat. Pour in the milk and add the egg. Salt and season with ground pepper.
Mix the minced meat thoroughly with a spatula. Cover the bowl with cling film and leave on the work surface for 15-30 minutes. Due to the swelling of the flour gluten, the minced meat will become viscous.
In a frying pan with a diameter of 24-26 cm, heat the olive oil over medium heat. Spread 1-2 tbsp. l. liver test. Leave at least 1 cm of space between the pancakes.
Without covering the pan, fry the pancakes over medium heat until golden brown, about 3 minutes. Carefully flip to the other side and continue cooking for another 2 minutes.
Place the finished pancakes on a flat plate in one layer. Continue cooking until the liver dough is gone. Serve the pancakes hot or warm.
