Slow cookers are designed exactly for this purpose and have long become indispensable helpers in the kitchen. Prepared according to this recipe, beef liver turns out very tender and juicy. It pairs perfectly with boiled potatoes (or mashed potatoes), rice, buckwheat, and pasta. If you have purchased frozen liver, transfer it from the freezer to the lower shelf of the refrigerator the night before and let it thaw slowly. This method ensures that the frozen product does not lose its valuable qualities.

Step 1

Free the beef liver from the film and carefully remove large veins. Dry thoroughly with paper towels.

Cut the liver into slices 1 cm thick. Place the liver slices on a board, cover with cling film and lightly beat with a rolling pin. The liver should not be beaten too hard so that it does not become deformed.

Cut the prepared liver slices into strips 1-2 cm wide and place them in a large bowl. Add flour and mix gently with a spatula. The liver should be completely covered with flour. If necessary, add 1 more tbsp. l. flour.

Set the multicooker to “Frying” mode. Pour olive oil into the multicooker pan and heat for 1 minute. Place the liver pieces into the pan.

Without closing the multicooker lid, fry the liver, stirring frequently with a silicone or wooden spatula for 4-5 minutes. The liver pieces should be covered with a golden crust.

Peel the onion and cut into small cubes. Peel and chop the garlic. Add the onion and garlic to the liver and continue to cook, stirring frequently, for another 5 minutes. The onion should become transparent.

Add sour cream to the multicooker pan, pour in 100 ml of hot water, salt, pepper and oregano and mix gently. Close the multicooker, set the “Stew” mode and cook for another 10 minutes. Place the liver on plates, add a side dish and sprinkle with finely chopped parsley.
