Albanian-style chicken is an original recipe for cutlets that differ from traditional ones by the method of preparing the minced meat. If chicken fillet is usually ground through a meat grinder, here we will do it differently. Simply cut the meat into small cubes or chop it on a board with a heavy knife, then mix it with the other ingredients of the recipe and form small cutlets, which we will quickly fry in a pan. This way, we will get an excellent result – the cutlets will be much juicier, with a pronounced texture and rich flavor. An additional bonus – you are freed from the arduous task of cleaning the meat grinder!

Chicken breast fillet - 400 g
Bulb onions - 1 pcs.
Egg - 1 pcs.
Sour cream - 1 tbsp.
Starch - 2 tbsp.
Extra virgin olive oil - 3 tbsp.
Dried garlic - 1 tsp.
Dried basil - 1 tsp.
Salt - to taste
Ground black pepper - to taste

Pat the chicken fillet dry with paper towels. Place the meat on a board and cut across the grain into 0.5 cm thick slices. Cut each slice into 0.5 cm cubes.
Finely chop the peeled onion and place in a large bowl. Add the prepared chicken, add the egg and sour cream, add starch and mix with a spatula.
Salt the minced meat, season with dried garlic, dried basil and black pepper. Mix thoroughly again. Cover the bowl with cling film and place in the refrigerator for 20 minutes.
Take the stuffing out of the refrigerator and remove the film. Heat olive oil in a frying pan over medium heat. It is optimal to use a large frying pan with a diameter of at least 26 cm.
Using a tablespoon, place portions of minced meat in the frying pan. Try to give the cutlets a round shape. Leave at least 1 cm of space between minced meat portions.
Without covering the pan, fry the cutlets until golden brown, about 4-5 minutes. Using a wide spatula, carefully turn the cutlets over to the other side.
Cover the pan with a lid and continue frying the cutlets for another 4 minutes. The cutlets should be covered with a golden brown crust. Place hot cutlets on plates and serve with any side dish and vegetable salad.
