A recipe for meat rice soup will come in handy for the hostess if the family prefers hearty first courses. Yes, there's no talk of lightness in this case, but the taste of the dish is truly excellent. The soup is prepared with a good meat broth (we suggest using pork on the bone, but you can also use beef). After that, the broth is strained into a pot, and then the soup cooking process begins. Stewed vegetables with tomato paste (onions and carrots) are sequentially added to the broth, followed by rice, diced potatoes, and garlic, which gives the dish a piquant taste and a special aroma. The soup is served with greens, which add freshness and spicy notes.

Prepare the ingredients for rice soup with meat. Wash the pork and place it in a saucepan. Fill with drinking water and bring to a boil. Skim off the foam. Cook the broth for 1.5 hours.
Peel and finely chop the onions for soup. Peel the carrots and grate on a coarse or medium grater. Heat the oil in a small frying pan. Add the prepared vegetables and, stirring, fry for 5 minutes over medium heat.
Add tomato paste to vegetables. Pour in 2 tablespoons of drinking water or broth from the pan. Simmer over low heat for 5 minutes. Remove from heat and set aside until ready to use.
Strain the finished broth through a fine sieve into a clean saucepan. Separate the meat from the bone and chop finely. Place the broth over high heat and bring to a boil.
Rinse the rice. Add to meat broth. Stir and cook for 10 minutes. Peel the potatoes and cut into small cubes. Add to broth with rice. Cook for 5 minutes.
Add vegetables stewed with tomato paste, as well as chopped meat, to the broth with rice. Salt and pepper to taste. Cook the rice soup over medium heat for 5 minutes.
Peel the garlic cloves and pass through a special press or grate on a fine grater. Add to rice soup along with bay leaf. Cook for another 3 minutes. Remove bay leaf.
Cover the pot with the rice soup with the meat tightly. Let the soup sit for about 5 minutes to deepen the flavor.
Wash the parsley and dill, dry them, remove the rough stems. Finely chop the remaining greens. Pour the soup into bowls. Add chopped greens to each.
