Thin pancakes on whey with holes will be a real discovery for those who have only tried the regular ones made with milk. Delicate, lacy, with a pleasant tanginess... Simply delightful! But these pancakes have an additional advantage: they allow you to use up the whey that remains after making homemade cottage cheese. So, if you make cottage cheese at home, save our recipe and try it out one day. The list of ingredients is very simple: eggs, salt, sugar, whey, and flour. Mix the batter and cook delicious pancakes that are great both hot and cold.

Prepare the dough for thin pancakes with holes. Beat the eggs into a bowl. Add salt and sugar. Whisk. You should not achieve splendor: it is important that all the ingredients simply come together.
Sift the flour together with baking powder into a separate bowl. Warm the whey a little if it is from the refrigerator. Alternately add whey and flour to the egg mixture, constantly stirring the dough with a whisk. To obtain a batter, you may need 1-1.2 liters of whey, so be guided by consistency.
Pour vegetable oil into the almost finished dough for thin pancakes with holes. Mix thoroughly again. Cover the bowl with the dough with a towel. Leave for 30 minutes at room temperature. During this time, gluten will develop in it, the pancakes will turn out more elastic and will not tear during turning.
Prepare frying pans with a thick bottom and low sides (it is better to bake thin pancakes with holes in two at once: it will be faster). Place them over medium heat and heat through.
Grease pancake pans with vegetable oil. This can be done either with a special brush or the “grandmother’s” method - with the flat side of half a potato tuber, pricked on a fork.
Pour some batter into the pans. Distribute over the entire surface. Fry until the thin pancakes are set on top. Holes will appear on the surface. Turn over carefully. Cook the other side for about a minute.
Place the pancakes with holes on a plate, one on top of the other, brushing with melted butter. Place in a warm place. Grease the hot pans again with vegetable oil. Make pancakes from the remaining batter.
