Fried pineapple in batter is a simple yet unusual dessert that will delight both children and adults. This pan-Asian dish is usually prepared in a skillet or deep-fried. The sweet and sour taste of the fruit perfectly harmonizes with the fried dough. We suggest you make the batter using cider: thanks to the alcohol, the crust on the fried pineapple will be airy and crispy. If desired, add spices to the dough: nutmeg, allspice, cinnamon, cloves, cardamom, or chili pepper. If children will be eating the pineapple in batter, replace the cider with the same amount of sparkling mineral water. Fresh pineapple can be substituted with canned pineapple: in this case, it is important to thoroughly dry the rings with paper towels, otherwise, the batter will run off. We recommend serving the battered pineapples warm to enjoy the crispy crust.

Cut off the top and bottom of the pineapple, stand the fruit upright on a board and cut the skin from top to bottom. Remove the eyes with a paring knife. Cut the pineapple into 1cm thick rings and remove the core. Pat the pieces dry with a paper towel and leave to dry.
For the batter, in a deep wide bowl, mix flour, sugar, salt and baking powder. Make a well in the flour and crack the egg into it. Start mixing the dough with a whisk, gradually pouring in the cold cider. The consistency of the batter should be like thick sour cream.
In a frying pan or wide saucepan over high heat, heat the oil to 180 degrees. To check readiness, dip the tip of a wooden skewer into the oil - boiling bubbles should be actively coming out of it. Place paper towels on a plate in 2-3 layers.
Using two forks, dip the pineapple rings into the batter, let the batter drip a little and fry for 2-3 minutes on each side until golden brown. Do not place more than 2-3 rings in the saucepan at a time. Otherwise, the oil will lose the desired temperature, the batter will fry worse and absorb too much fat.
Place rings on paper towels to absorb excess oil. Dust the battered fried pineapple with powdered sugar or serve warm with a scoop of ice cream.
