Yeast pie with berries is made from soft, tender, and fluffy enriched dough. To ensure the pastry turns out fluffy, prepare the dough using the sponge method. This step will only take about 20 minutes, but it will noticeably improve the result. Activating the yeast will ensure the dough rises quickly and fills with air bubbles, which means the pastry will turn out successful. Prepare the dough. Heat the milk to approximately 30°C and pour into a large bowl. Add salt, sugar, dry yeast and 150 g of flour. Stir with a whisk, breaking up any lumps of flour, cover the bowl with cling film and leave in a warm place for 20-25 minutes. During this time, the yeast is activated and bubbles form on the dough.
Melt and cool the butter. Add the remaining flour and butter to the bowl with the dough, knead the soft dough. Knead the dough thoroughly, form into a ball and return to the bowl. Cover with film and leave for 1 hour. The dough will approximately double in volume. Punch down the dough and leave in the bowl to rise for another 30 minutes.
Preheat the oven to 190°C. Place a rack on the middle level. Grease a baking dish with a diameter of 28-30 cm with butter or vegetable oil, sprinkle with flour and shake off excess. You can line the pan with baking paper and cut out a circle of the appropriate diameter.
Sort through the berries and remove any spoiled ones. Place in a colander and rinse with cool water. Scatter the berries on a paper towel and dry well. If you are making a pie with cherries, remove the pits.
Combine the prepared berries with sugar and starch. Stir gently so as not to deform the berries. You can simply shake the bowl until all the berries are coated with the sugar and starch mixture.
Remove the risen dough. Separate the third part. Roll out most of it into a circle and carefully transfer it to the mold. Form high sides and press the dough into the corners. Lay out and distribute the berry filling evenly.
Roll out the remaining dough into a thin layer and cut into narrow strips. Place them on top of the berry filling, forming a grid. Beat the yolk with 1 tbsp. l. water and brush the top of the pie with a pastry brush.
Place the pie pan in the oven and bake for 40 minutes. The top of the pie should be nicely browned and the bottom should be well baked. Remove the pie from the oven and leave in the pan for 5-10 minutes, then carefully transfer the pie to a plate and cool to room temperature.
