Salad with smoked chicken and fried mushrooms is a hearty dish suitable for any occasion. To speed up the process, you can buy pre-smoked chicken (it’s better to choose the dietary breast). However, if you have boiled chicken in the refrigerator, that will be sufficient. There is a small secret to give boiled meat a light smoked flavor. Simply cut the chicken into pieces and mix it with bacon fried in a dry skillet. If desired, champignons can be replaced with wild mushrooms – they are more aromatic. If you want to make the dressing lighter, you can mix mayonnaise with sour cream and add a bit of lemon juice and zest. In this case, the salad will have a more refined and delicate taste.

Prepare all the ingredients for the salad with smoked chicken and fried mushrooms. Place the eggs in a saucepan, add water and bring to a boil. Cook until done (about 7-8 minutes). Cool.
Peel the onion and chop finely. Heat vegetable oil in a frying pan and fry the onion, stirring, until golden brown. You will need about 3 minutes.
Cut the mushrooms into slices. Add the onion to the pan and cook, stirring, until all the liquid has evaporated (about 10 minutes). Add salt and pepper to taste and stir.
Place a serving ring on a flat plate. Remove the skin from the chicken. If there are bones in the piece, remove them. Cut the fillet into equal cubes and spread in the first layer. Press down a little and spread with mayonnaise.
Without peeling the cucumber, cut it into small cubes. Place it on top of the chicken and smooth it out. There is no need to lubricate this layer with mayonnaise, otherwise the vegetable will give a lot of juice, and we don’t need that.
Place the fried mushrooms on the cucumber and smooth it out. You can grease this layer with a small amount of mayonnaise. Grate the eggs on a fine grater. Then place them on top of the mushrooms, pressing down lightly.
Place the salad in the refrigerator for 2 hours to let it steep. Then remove the serving ring. Garnish with parsley and seasonings of your choice and serve.
