Meat in a potato coat is both a side dish and a main course at the same time. You could say it's a new take on the beloved mashed potatoes with a cutlet. It is made from simple ingredients and doesn't take much time. You simply need to grate the potatoes, place them in a dish, then spread the minced meat, and cover with a second layer of potatoes. You can use chicken or beef mince. Pork can also be used, but it might be too fatty. Therefore, it's better to mix it half and half with lean beef or veal mince. In one variation of this dish, a chicken or pork cutlet is placed inside. If you want to prepare it this way, keep in mind that the piece of meat should be well tenderized so it cooks quickly. The dish is suitable for both an everyday dinner and a festive table.

Peel the potatoes, then grate them on a coarse grater and add salt. Leave for 10 minutes. Then drain the resulting juice and squeeze the potato mixture well with your hands.
Add eggs to the grated potatoes, season with ground black pepper to taste and mix thoroughly again so that the spices are distributed as evenly as possible.
Peel the onion and chop very finely. Add chopped onion, salt, ground black pepper and Italian herbs to the minced meat. Stir to form a homogeneous mass.
Heat the vegetable oil in a frying pan, add the minced meat and cook over medium heat, stirring occasionally, until the minced meat is ready. It will take about 10-15 minutes. Cool slightly.
Preheat the oven to 180 °C. Prepare a deep baking dish. Using a silicone brush, lubricate it with vegetable oil.
Place a few grated potato cakes on the bottom with a spoon, make small indentations in them and place the prepared minced meat in these indentations. Then cover the top with the same flatbreads.
Bake the meat in a potato skin in the oven for 30-40 minutes. The potato layer should be browned. Serve the dish hot, with sour cream. You can sprinkle with any chopped herbs.
