Marinated salmon with coffee is an absolutely stunning appetizer that even the most discerning gourmands will appreciate. It combines everything we love about salted fish: the tenderness of its texture, its refined taste, and its delicate aroma. The latter might give you some pause, as you may wonder whether coffee notes are appropriate in this context... We think they are, especially since in the finished fish, they are quite subdued. Serve the marinated salmon with fresh bread, tasty butter, and be sure to sprinkle it with fragrant herbs. We promise interesting gastronomic experiences!

Salmon fillet with skin - 500 g
Lemon juice - ½ pcs.
Ground coffee - 4 tbsp
Cane sugar - 20 g
Coarse sea salt - 50 g

Prepare all ingredients. Wash the fish fillets and pat dry with paper towels. Place in a container or wide bowl. Sprinkle with lemon juice.
To make the marinade, place ground coffee in a small bowl. Add cane sugar and sea salt and stir. Rub the mixture onto the salmon fillets on all sides.
Wrap the prepared salmon fillet in cling film and then in aluminum foil. Refrigerate for at least 48 hours to marinate.
Remove the salmon fillet and remove the foil and film. Wipe the surface of the fish with a paper towel, then rinse off any remaining marinade with cold boiled water. Cut the fish into thin slices and serve.
