Shawarma with minced meat is a very homemade way of preparing this popular dish, and indeed an excellent one. After all, good minced meat is no worse than chicken or turkey grilled on a spit! Moreover, we strongly recommend making the minced meat yourself in the recipe: it will be both tastier and healthier. The process of making shawarma is very simple: first, the minced meat is fried, cooled slightly, and then mixed with chopped vegetables and greens. After that, it is sprinkled with grated cheese and wrapped in a sheet of thin lavash. As you can see, the process will be understandable even for a novice cook! Who (we are sure) will want to repeat our recipe at home and elevate their status in the eyes of loved ones.

Prepare shawarma ingredients. First make the mince. Pass the pork and beef pulp through a meat grinder with a fine wire rack into a small bowl.
Season the meat with ground paprika. Heat oil in a large frying pan. Place the meat and, breaking up lumps with a spatula, stirring, fry over medium heat for about 7 minutes.
Peel the garlic and pass through a press and add to the pan with the minced meat. Season with salt and pepper. Cook over medium heat for another 3 minutes. Let cool.
Wash fresh cucumbers and tomatoes for shawarma. First cut the cucumbers into long thin longitudinal slices and then into strips. If the cucumbers are large, remove the seeds.
Cut the tomatoes into halves. Remove the juice with a teaspoon. Cut the remaining tomato pulp into small slices or strips, to suit your taste. Peel the red onion for shawarma and cut into thin rings.
Wash the lettuce leaves and dry well with paper towels. Wash and dry the parsley. Tear off the leaves and chop finely. Grate the cheese on a coarse grater.
Prepare the shawarma sauce. Place sour cream in a small bowl. Add tomato sauce and mustard. Salt and pepper to taste. Mix thoroughly.
Place sheets of thin pita bread on a work surface. Brush half of each with the resulting sauce, leaving free edges about 7 cm wide. Distribute lettuce, minced meat, as well as onions, cucumbers, tomatoes and parsley on top.
Sprinkle the shawarma filling with grated cheese. Fold the edges of the lavash sheets inward and carefully wrap the filling so that it does not fall out and is as if all “sealed.”
Fry the shawarma one at a time in a dry grill pan on all sides and serve immediately. You can cut each shawarma in half: this will make it easier to eat.
