Potato casserole with minced meat in a skillet is a simple and delicious dish for a family dinner. You won't need an oven: we'll cook it directly in a skillet. You need to separately fry the potatoes and minced meat, then add an egg mixture and simmer directly in the skillet until done. The ingredients are simple and accessible: potatoes and any minced meat, which you bought or prepared at home using a meat grinder or blender. You will need raw potatoes, but if you have boiled ones, even better. This will significantly reduce the cooking time. Peel the potatoes and soak in cold water for 30 minutes to remove excess starch. If you don’t have time, just rinse thoroughly with running water.
Heat half the vegetable oil in a frying pan, add the potatoes and fry, stirring, until almost done (about 15 minutes). Season with salt and pepper to taste.
Peel the onion and carrots. Chop the onion on a cutting board. Grate the carrots on a coarse or medium grater. Peel the garlic and pass through a press or finely chop.
In another frying pan, heat the remaining oil, add the onion, garlic and fry until transparent. Then add the carrots and cook, stirring, for another 5 minutes. The vegetables should become slightly soft.
Then add minced meat to the vegetables. Break into small pieces with a spatula. Fry, stirring, for about 7-8 minutes. The minced meat will change color, decrease in size and release juice.
Season the minced meat with salt and ground black pepper to taste. Add Provençal herbs and stir. Place the prepared minced meat on top of the fried potatoes in an even layer.
Prepare the filling. To do this, combine eggs and milk in a small bowl and whisk. Instead of milk, you can use low-fat cream.
Add salt and ground black pepper to the filling and stir again to obtain a homogeneous mass. Carefully pour into the pan with potatoes and minced meat.
Cut off the long stems from the parsley (we won't need them, they can be used to make broths). Chop the leaves very finely and sprinkle them over the minced meat.
You can put the butter in the freezer for 15 minutes and then cut it into small pieces. Distribute them over the entire surface of the casserole at a short distance from each other.
Cover the casserole with a lid and cook over very low heat for about 15-20 minutes. Make sure that the casserole does not burn and that the egg filling does not set.
Grate the cheese on a fine grater. Open the lid of the pan and sprinkle the casserole with grated cheese. Close it again and cook over low heat for another 5-7 minutes until the cheese melts.
Then turn off the burner and let the casserole rest for another 10 minutes. Remove the dish from the heat and garnish with chopped herbs or tomato slices if desired.
Cut the casserole directly into the frying pan into equal portions and place on plates. Serve with sour cream or your favorite sauces of your choice.
