Pizza pancakes are an extraordinary dish that will definitely lift your spirits even on the gloomiest morning. Preparing pizza-style pancakes by frying them in a pan is not difficult at all—just finely chop everything you love in a pizza and add it to the batter. Such a simple task can be handled even by a novice cook! The composition of additional ingredients can be anything—add boiled chicken and olives, sausages, sweet peppers, pickled cucumber. Or if you prefer, you can leave out all these products and crumble some ham into the batter. Experiment with cheese: cut mozzarella into cubes or use grated Parmesan, add a bit of smoked Chechil or use more cheddar, in short—follow your taste! That's what makes this recipe great—pizza pancakes will turn out different each time but always very tasty!

Preparation Steps

Step 1

Cut the hunting sausages into thin circles. Grate the cheese on a coarse grater. Cut the cherry tomatoes into 4 parts. If you use regular tomatoes, cut them into cubes. It is optimal to use tomatoes with dense pulp. Cut the olives into thin slices.

Cut the sweet pepper pod lengthwise and remove the stem and seeds. Using a small knife, carefully cut off the partitions. Place the halves on a board and cut into small cubes. To make the pancakes look beautiful, we used half a red and a green pepper.

Separate the basil leaves from the stems. Set aside a few beautiful leaves to decorate the finished dish, and chop the rest. If desired, basil can be replaced with parsley. Finely chop the green onions.

In a large bowl, combine kefir with eggs, salt, add sugar and freshly ground pepper. Add baking powder and mix with a mixer or whisk. The mixture should foam slightly.

Sift the flour through a fine sieve. Pour the flour into the bowl with the liquid ingredients and stir until smooth. There should be no lumps left in the dough. Leave the bowl of dough on the work surface for 5 minutes.

Add sausage, tomatoes, olives, bell peppers and cheese to the prepared dough. Add chopped herbs and chopped green onions. Gently stir the dough with a spatula.

Place a large frying pan on the stove, pour in 1 tbsp. l. vegetable oil and heat over medium heat. Using a tablespoon, place portions of the dough into the frying pan, leaving free space between the pancakes so that they do not stick together during the frying process.

Reduce heat to low, cover the pan and fry pancakes a la pizza for 3 minutes. When the bottom surface is sufficiently browned, turn the pancakes over to the other side.

Cover the pan again with a lid and continue cooking the pizza pancakes over low heat for another 2-3 minutes, until the other side is also golden brown.

Line a flat plate with paper towels. Carefully remove the pizza pancakes from the pan with a wide spatula and place them on a plate in a single layer, otherwise their crispy crust will become soggy.

Add 1 more tbsp to the pan. l. vegetable oil and spread new portions of dough with a tablespoon. Continue baking the pancake pizzas until you run out of dough. Add a little more oil to the pan as needed.

After all the pancakes are ready and have cooled slightly, serve them on the table, garnishing with the reserved basil or parsley leaves. Serve separately with ketchup, mustard or other sauce of your choice.
