After such a delicious sandwich, you won't want to eat fast food anymore! By preparing the sandwiches according to our tried and true recipe, you will provide your loved ones with a hearty and balanced breakfast that will energize them for the whole day! Usually, hot sandwiches with cheese and sausages are made in the oven, but if you have a home electric grill – use it, it will turn out great!

Preheat the oven to 180 degrees. Line a baking tray with baking paper and place on the middle rack of the oven to preheat. You can use a large ovenproof dish measuring 24x30 cm. Place it on a wire rack.
Cut the tomato in half and remove the stem. Cut the halves into small cubes. If desired, you can remove the skin from the tomato. To do this, cut the tomato crosswise, put it in boiling water for 1-2 minutes, and then pour cold water over it. After this, the skin will be easy to remove with a small sharp knife.
Cut the sausages lengthwise into thin slices, then cut into narrow strips or small cubes. There is no need to pre-boil the sausages; they will undergo the necessary heat treatment in the oven.
Grate the cheese on a fine grater. Any soft cheese, such as Tilsiter or Russian, is suitable for making sandwiches. You can also use hard cheeses, such as Parmesan or cheddar, or mix several types of cheese.
Remove the stems and chop the parsley leaves. Young parsley can be chopped along with the stems. If desired, parsley can be replaced with cilantro, dill or basil. Set aside a few green leaves for decoration.
In a large bowl, combine sausage, chopped tomatoes, herbs and half the grated cheese. Season with ground black pepper. If desired, you can add dried herbs to the mixture, for example, Provençal or Italian, dried thyme or oregano, depending on your taste. Stir the mixture with a spatula.
Cut white bread into slices at least 1 cm thick. For sandwiches, you can use any type of bread: pan, toast, ciabatta or baguette. It makes sense to cut the baguette first lengthwise, then crosswise, so that you get 4 sandwich bases.
If desired, you can make sandwiches using black bread as a basis. Rye-wheat varieties of bread, for example, Darnitsky, Orlovsky or rye, are well suited, and you can also prepare a dish on Borodino bread.
Brush one side of the bread slices with butter and place on the hot baking sheet, butter side down. Place the prepared cheese and sausage mixture on the sandwiches.
Use a silicone spatula to smooth out the cheese mixture and make a well in the center of each bread slice. Carefully pour one egg into each cavity. Season with salt and pepper.
Spread the remaining grated cheese on the sandwiches, be sure to sprinkle the cheese on the egg. Place the baking sheet on the middle rack of the oven and bake the sandwiches for 10-12 minutes.
Remove the baking sheet and assess the degree of readiness of the sandwiches. The cheese should be completely melted, the egg white should be baked and firm, and the yolk should remain semi-liquid. If necessary, return the pan to the oven and continue baking the sandwiches for another 3-4 minutes.
Place the finished sandwiches on a wooden board or plate. Season with smoked or sweet paprika if desired and garnish with reserved parsley leaves. Serve sandwiches hot.
