Cinnabon Pancakes — a simplified version of the famous rolls, which is just as good as the original. We promise a refined taste and vibrant aroma! The dough is prepared with boiling water, which partly cooks it, making the thin pancakes very elastic and preventing them from tearing when flipped in the pan. Why did we call them "Cinnabons"? Because, according to the recipe, the hot pancakes need to be filled with a cinnamon-sugar mixture, rolled into tubes, and topped with the traditional cream cheese frosting. Serve the Cinnabon pancakes immediately: they taste better this way.

Prepare the pancake dough. In a bowl, lightly whisk the eggs with salt and sugar. Pour in the milk. Whisk again until the mixture has a uniform consistency.
Gradually add flour to the egg-milk mixture. Mix thoroughly with a spatula so that there are no lumps. Pour water into the kettle and bring to a boil.
While constantly stirring the pancake dough with a spatula, pour in boiling water in a thin stream. At the final stage of this process, you can work with a whisk. Pour in vegetable oil and stir again. Leave the dough for 20 minutes.
Prepare a pancake pan with a thick bottom and low sides. Put it on the fire and heat it up. Grease a frying pan with vegetable oil and pour some dough onto it. Fry the pancake on both sides and then transfer to a plate. Also prepare pancakes from the remaining dough.
Mix sugar with two tablespoons of ground cinnamon. Place the pancakes on the work table. Sprinkle with cinnamon mixture. Fold the edges of the pancakes inward on all sides, then roll them into tubes.
Place the prepared pancakes in a baking dish greased with vegetable oil. Place in the oven at 180°C for about 5 minutes to melt the sugar inside the tubes.
To fill, lightly whisk the cream cheese, cream and powdered sugar. Distribute among pancakes in pan. Sprinkle with remaining ground cinnamon and serve immediately.
