Berry pie with fermented baked milk can be baked every day because it is easy to prepare and extremely appetizing. Fermented baked milk gives the pastry lightness and a delicate aroma, while the berries provide an interesting texture and a bright taste. It is clear that the best berries for the pie filling are those that have been freshly picked. But that doesn't mean you'll be without pies for the rest of the year — bake them with frozen berries, such as cherries, blueberries, or sea buckthorn, and enjoy your meal!

Preheat the oven to 180°C. Place the rack on the middle level. Prepare a mold with a diameter of 24-26 cm. Grease the bottom and sides of the mold with softened butter, dust with flour and shake off excess.
Sort the berries, remove the sepals and stalks. Place in a colander and rinse with cool water. Lay a paper or linen towel on your work surface and scatter the berries to dry.
Wash the lemon thoroughly in hot water with a brush or stiff sponge. This is done in order to remove the waxy layer from the peel. Using a fine grater, remove 1 tsp. zest.
Prepare the dough. Break the eggs into a large bowl, add regular and vanilla sugar and a pinch of salt. Beat with a mixer until a fluffy light mass forms, about 5-7 minutes.
Sift flour with baking powder. Pour fermented baked milk into a bowl with beaten eggs, add lemon zest and add flour mixture. Mix the dough with a mixer until smooth, about 3-4 minutes.
Sprinkle starch over the berries and mix gently. Pour half of the batter into the prepared pan. Scatter half the berries on top. Add the remaining dough and arrange the other half of the berries.
Place the pan in the oven and bake the cake for 45 minutes. Check the readiness of the pie with a wooden skewer - it will come out dry when the pie is baked. If there is any dough left on the skewer, continue baking the cake for another 10 minutes.
Remove the cake from the oven and leave in the pan for 10 minutes. Carefully transfer to a flat plate and let cool completely. Before serving, decorate with powdered sugar by sprinkling the top of the pie through a strainer.
