Pancakes with mayonnaise and water can be prepared at least as an interesting culinary experiment. Rest assured: you will not be disappointed! Moreover, this recipe allows you to make use of mayonnaise accidentally forgotten in the refrigerator (of course, as long as it hasn't been there for too long). The pancakes are easy to make: eggs are beaten with sauce, sugar, and salt, after which hot water is added to the mixture, and finally, flour. The resulting batter should be allowed to rest a bit to let the gluten develop: it will provide the pancakes with special elasticity.

Prepare all pancake batter ingredients. Beat the eggs into a bowl. Add mayonnaise. Beat with a whisk or mixer to obtain a mixture of homogeneous consistency.
Add sugar and salt to the egg-mayonnaise mixture. Whisk again until completely dissolved. Bring drinking water to a boil in a kettle or saucepan. Let cool slightly (literally 5 minutes).
Then pour hot water into the egg-mayonnaise mixture in a thin stream, stirring constantly with a whisk or mixer. Sift flour on top. Mix thoroughly so that there are no lumps.
Add vegetable oil to the pancake dough. Mix thoroughly again. Cover the pancake dough with a towel and leave for 30 minutes at room temperature.
Heat a pancake pan with a thick bottom and low sides over high heat. Grease with a small amount of vegetable oil. Scoop the dough into a ladle and pour into the pan, shaking until it is evenly distributed over the surface.
Fry the pancake until browned (the top should be thoroughly set). Turn the pancake over with a spatula. Cook the other side for about 30 seconds more.
Transfer the pancake to a plate and brush with vegetable oil. Keep in a warm place until serving. Prepare pancakes from the remaining dough in the same way. Stack the finished ones, brushing them with oil.
