Pancakes with oat milk without eggs are the perfect solution for vegans or those observing Lent. And this is a case where the absence of traditional ingredients does not affect the taste of the dish at all! Beautiful, "lacy" vegan pancakes are so good that even many meat-eaters will enjoy them. The recipe is simple, and all ingredients are quite accessible (oat milk is often sold in the notorious "convenience stores"). These pancakes can be served with jam, fresh berries, or a savory vegan sauce to taste.

Prepare all pancake batter ingredients. Sift the flour through a fine sieve with salt, sugar and baking powder into a mixer bowl. Mix thoroughly on low speed.
Then, stirring with a whisk, pour in half the oat milk. Try to do this very carefully so that there are no lumps in the pancake batter. The mixture will be thick.
While continuing to stir the pancake batter with a whisk, pour in the remaining oat milk. Cover the top of the bowl with dough with cling film. Leave for 30 minutes at room temperature so that the gluten of the flour swells (then the pancakes will be more elastic).
Pour vegetable oil and carbonated mineral water into the pancake dough. Mix thoroughly with a whisk. The dough should have the consistency of liquid kefir.
Place a thick-bottomed pancake pan over medium heat and heat it. Lubricate with vegetable oil using a brush. After this, you can start frying pancakes.
Pour some pancake batter into the pan with a ladle. Fry until well browned (the top should be thoroughly set). Turn the pancake over with a spatula.
Fry the pancake on the other side for about 30 seconds. Transfer to a clean plate and brush with vegetable oil. Keep in a warm place until serving. Prepare pancakes from the remaining dough in the same way.
