Pickled chicken hearts are an unusual cold appetizer that will pleasantly surprise you. Overall, you can prepare many delicious dishes from chicken offal, and pickled hearts are one of them! Both chilled and frozen hearts will work, but you'll need to thaw them properly. Remove them from the freezer 4-6 hours before you start cooking, and place them on the bottom shelf of the refrigerator where they will slowly reach the necessary temperature. Serve the prepared hearts with onions, or if desired, skewer them and garnish with cherry tomatoes, slices of pickled cucumbers, and sprigs of greenery.

Trim fat and blood vessels from chicken hearts, cut and remove blood clots. Wash the processed hearts thoroughly, place in a saucepan and pour in 1 liter of cold water.
Bring to a boil over high heat and reduce heat to medium. Skim off the foam, add salt and cover the pan with a lid. Cook the hearts until tender, about 20 minutes. Leave to cool in the broth for another 20 minutes.
Prepare the marinade. Using a stiff brush, thoroughly wash the lemon and remove the zest. Squeeze the juice from half a lemon. Peel the ginger and grate it on a fine grater. Chop the garlic. Cut the onion into rings.
In a large bowl, combine soy sauce, honey, chili sauce, olive oil and lemon juice and add 50 ml water. Whisk until smooth. Add the zest, garlic and ginger, season with pepper and stir again.
Place the hearts in a bowl with the marinade, add the onion and mix gently. Cover the bowl with cling film and refrigerate for at least 4 hours. Serve sprinkled with finely chopped cilantro.
