On one chop, at the thickest part, make a cut about halfway through the thickness of the piece. If the meat is bright pink, continue cooking. Remove the meat from the refrigerator 2 hours before cooking, it needs to warm up to room temperature. Pat each piece dry on both sides with a paper towel. If the steak has a very thick layer of fat, you can trim it off a little. If you like your steak with a thick layer of fat, make several cross cuts (1-2 mm) on it.
An hour before cooking, pepper and salt the meat on all sides. It is better to use medium grind salt and pepper. If you want to add additional dried seasonings to your meat, now is the time to do it.
Heat a thick-bottomed frying pan to maximum, pour in 2-3 tbsp. l. vegetable oil, heat and add pieces of loin. Fry the meat over high heat until golden brown. Turn over and brown the other side.
Using tongs or two forks, place the pieces of meat on the side, fat side down. Fry until the fat is browned. Transfer the meat to a plate.
Peel the garlic and crush it with the flat side of a knife. Add butter to the pan and when melted, reduce heat to medium. Add garlic, a sprig of thyme, rosemary or sage. Stirring constantly, cook for about 1 minute.
Return the meat to the pan and cook for 3 minutes on each side. Raising the pan occasionally, baste the pieces of meat with the flavored oil. As soon as the garlic and aromatic herb sprig begin to burn, be sure to remove them.
Transfer the finished steak to a heated plate and cover with foil or parchment. Let the meat rest - at this time the juice will be evenly distributed throughout the piece. After 5-7 minutes, serve.
