If you have always dreamed of delving into French cuisine, be sure to make French onion soup. Originally, this soup was food for common people, as its main ingredients—cheese, bread, onions, and wine—were accessible to almost everyone. Over time, this cheese soup can now be found in upscale restaurants. Traditionally, the dish is prepared with beef broth, but we suggest using chicken broth—it will make the soup more velvety. And be sure to add wine to the soup; it will give the soup that quintessential French flavor.

chicken broth - 1.2 l
Bulb onions - 4 pcs.
Garlic - 1 clove
Edam cheese (or any cheese similar to Comte or Gruyere) - 200 g
Butter - 50 g
White dry wine - 220 ml
White bread (stale) 8 slices, about 2.5 cm thick - to taste
Wheat flour - 1 tbsp.
Ground black pepper - to taste
Salt - to taste

Peel the garlic and onions. Chop the garlic and cut the onion into thin half rings. In a heavy-bottomed saucepan over medium heat, heat the butter and fry the onion and garlic until beautifully golden.
Add wheat flour to the pan, mix all the ingredients well, and then pour in white wine and chicken broth. Add salt and ground black pepper to the pan. Reduce heat to low and cook soup, stirring occasionally, for 25-30 minutes.
While the soup is cooking, cut the cheese into 8 slices, and dry the stale white bread in a toaster, oven, or fry in a dry frying pan until crispy.
Place the food in portioned heat-resistant dishes with high sides (for example, clay or ceramic bowls) in the following order: put a slice of dried bread on the bottom, then a slice of cheese, again bread and then another slice of cheese. Collect 4 blanks in this way.
Pour the finished soup into each bowl so that it lightly covers the top slice of cheese and place the dishes in an oven preheated to 200°C. Cook for about 10-15 minutes more.
Carefully remove the dish from the oven so as not to burn yourself. Serve soup immediately, transferring bowls to racks. If desired, garnish the soup with parsley.
