A steak made from red fish can be made from almost any red fish of the salmon family. Just remember that different representatives of this species have different fat content, so the methods of preparation will also vary. For fried steaks in a pan, it's better to use large, fatty fish; ideally suited are: salmon, sea trout, salmon trout, and chum salmon. As for sockeye salmon, pink salmon, and coho salmon, it's better to bake them in the oven at low temperature, and then very quickly brown them on the grill or with a blowtorch. However, a steak doesn't necessarily need to have a browned crust. If you follow a healthy diet plan, you can even cook it in a steamer.

Check the skin of the steaks for scales; if there are any, the fish must be carefully cleaned. After cleaning, do not wash the fish so that it does not absorb excess moisture. It will be enough to wipe the steak on all sides with a damp paper towel.
Pat the steak all over with a clean paper towel to remove excess moisture. Pepper and salt the fish on all sides, coat with olive oil and leave on the plate for 30 minutes.
Heat a grill pan or a regular frying pan with a thick bottom well. Using a pastry brush, lightly grease the pan with vegetable oil and wait 10 seconds.
Place steaks in skillet and cook over medium-high heat for 2 minutes. Turn the fish over and cook for another 2 minutes. Turn off the heat, turn the steaks over and leave in the pan for 3 minutes. Serve with a wedge of lemon.
