Nests with mozzarella cheese and tomatoes are perfect for a light lunch or an effortless dinner. The secret of this dish lies in the rich tomato sauce. To make it right and tasty, use ripe tomatoes, and if they're out of season, canned tomatoes in their own juice will do. Add onions and garlic, and your pasta will become bright and aromatic, with melted mozzarella adding the final touch! Pasta shaped like nests does not need to be pre-cooked; they are simply covered with the sauce and baked. In half an hour, the pasta will be fully cooked. Thus, your participation in cooking the dish is minimized—just put the dish in the oven!

Mini mozzarella - 200 g
Tomatoes - 500 g
Bulb onions - 1 pcs.
Garlic - 2 clove
Refined vegetable oil - 3 tbsp.
Dried Italian herbs - 1 tsp.
Sugar - ½ tsp.
Salt - to taste
Ground black pepper - to taste

Cut the tomatoes in half and grate on a coarse grater. Remove the skin. If you use canned tomatoes, puree them with a blender into a homogeneous puree.
Finely chop the onion and garlic. Heat vegetable oil in a deep frying pan over medium heat and simmer the onion until translucent, 5 minutes. Add garlic, pour in tomato puree.
Salt sauce, season with dried herbs, sugar and black pepper. Cook for 10 minutes, stirring frequently with a spatula. The sauce should thicken a little.
Preheat oven to 180°C. In a heatproof dish measuring 25x25 cm, arrange the nests loosely. Pour in 200 ml of hot water and add the sauce from the frying pan.
Cover the pan with foil and place on a rack set on the middle rack of the oven. Bake the pasta for 20 minutes. During this time, the tagliatelle should become soft.
Remove the mozzarella balls from the brine and pat dry with paper towels. Remove the pan from the oven and remove the foil. Arrange the mozzarella balls into nests and return the pan to the oven.
Bake the pasta for another 10 minutes. The mozzarella should melt. Place the nests on plates, pour the sauce over the pan and serve immediately. If desired, garnish each serving with herbs.
