Cut large champignons into slices. Small mushrooms can be cut in half. Cut the onion into small cubes. Chop the garlic. Finely chop the parsley leaves.
Heat a deep frying pan over high heat. Add the mushrooms and fry without oil until a pronounced mushroom aroma appears, 2-3 minutes. Pour oil into the pan, add onion and garlic and continue cooking for another 5 minutes.
Pour 300 ml of hot water into the frying pan, add cream, salt, season with dried thyme and ground black pepper. Stir the sauce and bring to a boil over medium heat.
Loosely arrange the nests in the creamy sauce. The sauce should cover the pasta almost completely. Cover the pan, reduce heat to low and cook for 30 minutes. While the pasta is cooking, grate the cheese.
Place the nests on plates, add the creamy mushroom sauce from the pan and sprinkle with grated cheese. Garnish the dish with chopped parsley and serve immediately.
