Soup with smoked ribs will not leave anyone indifferent. The taste of smoked meats is best revealed in soups made from legumes, with peas or beans. You can buy smoked ribs specifically for making soup, or you can use those leftover from a piece of smoked brisket or loin. We suggest cooking a soup with peas, a time-tested classic. If you prefer the peas in the soup to be completely boiled down, almost like a puree, choose split peas; they also cook much faster than whole peas and are cheaper.

Peel the onions and garlic and place them in a saucepan. Place the smoked ribs, bay leaf there and fill everything with cold water. Cook over medium heat for about 20 minutes.
Remove the smoked ribs from the pan, place them in a suitable container and leave to cool at room temperature - this will allow the meat to fall off the bone easily.
Soak dry peas in cold water for 2-3 hours. Then rinse thoroughly several times with running water and transfer to a saucepan. Cook the peas for about 1 hour 20 minutes, until almost done.
Cut the potatoes into 1.5x1.5 cm cubes, grate the carrots on a coarse grater and place in a saucepan with the peas. Reduce heat to low and simmer the soup for another 10-15 minutes.
Remove the meat from the cooled ribs and disassemble it into fibers. Place the meat in a saucepan with the remaining ingredients, add salt and ground black pepper to taste and simmer the soup over low heat for another 5-7 minutes.
After the required time has passed, turn off the heat, cover the pan tightly with a lid and let the smoked rib soup simmer for at least 15-20 minutes.
Serve the finished soup with sour cream, finely chopped herbs (to your taste) or green onions. And this soup will be especially good if you add white or rye bread croutons to it.
