Prepare all cheesecake ingredients. Sort the raisins and rinse with cold running water. Place in a bowl, cover with hot water and leave for 15 minutes. Then dry by spreading on a paper towel.
If the cottage cheese is a bit damp, wrap it in two layers of gauze and place in a colander. Place a weight on top. Leave the cottage cheese for 3 hours, then rub through a sieve and additionally punch with a submersible blender. Use dry cottage cheese immediately.
Add half the flour to the cottage cheese and mix thoroughly with a fork. Beat in the egg, add sugar, salt and mix. Add raisins. Stir again until it is evenly distributed throughout the dough.
Form the mass into a bar 5-6 cm thick and cut it into pucks. Roll in the remaining flour. Heat vegetable oil in a frying pan with a thick bottom and place some of the cheesecakes in it. Brown over medium heat.
Turn over and fry the other side until golden brown. Also prepare cheesecakes from the remaining dough. Place them on a large plate and let cool slightly. Before serving, brush each one with sour cream and garnish with raspberry jam.
