Such barley porridge with pork is capable of breaking all the stereotypes many have about this grain. Why did this happen in the first place? Let's just say: barley was simply unlucky. Some encountered poorly prepared porridge in kindergarten, some at school or in the army... Unfortunately, in public catering, barley was cooked very poorly. Now the situation has changed, and dishes with it are served even in reputable restaurants. Try to make friends with this grain using our recipe for barley with pork. The dish is quite simple to prepare: the porridge is cooked separately, and the pork is stewed with vegetables in a pan. After that, these components are mixed, and the barley porridge with meat is allowed to "rest" a bit, so that their flavors and aromas combine.

Pork pulp (ham) - 300 g

The evening before cooking porridge with pork, wash the pearl barley with running water and place it in a saucepan. Fill with cold water (1 liter) and leave overnight.
In the morning, drain the pearl barley in a colander and rinse with running water. Then transfer the cereal to the pan. Pour in 2.5 liters of drinking water and bring to a boil over high heat. Add a little salt and cook the pearl barley porridge over low heat, covering the pan with a lid, for 40 minutes.
While the pearl barley porridge is cooking, work on the pork. Cut it into small cubes or strips. Peel the onion and garlic and chop. Peel the carrots and cut into thin strips.
Heat vegetable oil in a large frying pan. Add carrots and stir-fry over medium heat for 4 minutes. Place onion and garlic in the pan. Stirring, fry everything together for another 3 minutes.
Add pork to the pan with vegetables. Fry over medium heat, stirring occasionally, for 10 minutes. Salt, pepper, season with paprika and coriander. Pour in a little hot water (100–150 ml) and simmer the meat in a loosely closed frying pan for 30 minutes.
Place the finished pearl barley in a sieve and add to the pan. Stir. Close the pan tightly with a lid and additionally wrap it with a thick towel. Leave to brew for 20 minutes.
