During Orthodox fasts, there are days when fish is allowed. On such days, you can prepare lean fish patties. According to the recipe, the dish doesn't include eggs, but no one will be disappointed because semolina ensures the patties are fluffy; it swells up and binds the ingredients perfectly. What kind of fish should be used in the recipe? We suggest considering the most budget-friendly option, like pollock: its fillet has a firm texture that is perfect for patties. And make sure to coat the patties in breadcrumbs before frying, as they will provide a golden, crispy crust that is both beautiful and appetizing.

Prepare all ingredients for lean fish cutlets. If you bought frozen fillets for them, let them thaw slowly in the refrigerator to keep the fish juicy.
Cut the pollock fillet into small slices and pass through a meat grinder with a fine grid into a bowl. Peel the onion, then chop it very finely. Peel the garlic and pass through a press. Finely chop the dill.
Add onion, garlic and dill to the bowl with minced fish fillet. Stir. Add semolina and flour. Salt and pepper to taste. Stir again.
Leave the minced meat for lean fish cutlets for 30–40 minutes. During this time, the semolina will swell, “bind” the ingredients, and the fish cutlets will not fall apart when frying.
Form fish cutlets from the resulting minced meat. Roll them in breadcrumbs. Place a large frying pan on the fire. Pour in vegetable oil and heat it.
Place the breaded fish cutlets into the pan. Fry on both sides until golden brown. Then cover the pan with the cutlets with a lid and bring them to readiness over low heat (5-7 minutes).
