Lean Napoleon will impress all fans of this wonderful treat. By the way, no one would even guess that the dessert contains neither butter nor eggs! The recipe for lean "Napoleon" is essentially no different from the traditional one: the layers are rolled out and baked the same way, the cream is cooked the same way, just not on cow's milk, but on a plant-based alternative. Then the cake is assembled, again, in a quite classical manner. And then homemade Napoleon should be well-soaked with cream and become just the way we all love it: very tender and very delicious.

Preparation Steps

Step 1

Prepare the dough for lean Napoleon cakes. Pour cold drinking water into a bowl. Add sugar and salt. Stir until they are completely dissolved.

Pour vegetable oil into the water. Stir again. Sift 450 g of flour with baking powder into a separate bowl. Add it to the water in portions, stirring first with a spatula and then with your hand. If the dough is too sticky and soft, add a little more flour.

Knead the dough for the Lenten cake crust. Gather into a ball, place in a bowl, and cover the top with cling film. Leave at room temperature for 30 minutes.

Remove the dough from the bowl onto a work surface dusted with flour. Roll it into a thick sausage and divide into 10 portions. Roll each into a ball. Cover with a towel.

Preheat the oven to 190°C. Take one ball and roll it out onto a thin sheet of baking paper dusted with flour. Cut out a circle with a diameter of 25 cm using a plate or the sides of a springform pan. Transfer along with the paper to a baking sheet.

Place the cut dough on a separate sheet of paper. It will need to be baked and then used to decorate the cake. Prick the crust frequently with a fork. Bake for 5 minutes. Transfer to a flat surface and let cool. Also prepare the rest of the cakes for Napoleon. Stack the cooled ones.

Prepare lean cream for Napoleon cake. Place both sugars, cornstarch and flour in a heavy-bottomed saucepan. Mix thoroughly. Pour in 150 ml almond milk. Mix with a whisk so that there are no lumps.

Pour in the remaining milk. Place over low heat and, stirring constantly with a whisk, bring to a boil. The mass should thicken. When bubbles begin to appear on the surface, cook for another minute and then remove from heat. Cover with cling film until it covers the surface of the cream and let cool.

Assemble the Napoleon Cake. Grease a large flat plate with a tablespoon of cream. Then place the cakes on it in a stack, covering it with cream. Cover the top one (without cream) with a board and lightly press the lean “Napoleon” with your hands.

Cover the top and sides of the Napoleon with the remaining cream. Crumble the cake scraps. Sprinkle over the top and sides of the cake. Leave the sweet dessert at room temperature for 2 hours, then put it in the refrigerator before serving.
