A juicy filling of fresh or roasted vegetables with a piquant sauce, wrapped in a thin sheet of lavash – that's the whole secret. This quick-preparation roll is an excellent option for those fasting, as well as for vegetarians. Those who simply love light and healthy food will also appreciate it. The vegetable composition in the recipe can be anything. Whatever you have in your fridge, just wrap it in lavash. There are many sauce options to suit any taste, from ketchup to pesto and tkemali. This snack is easy to make at home and take with you to work, on a trip, or for a picnic.

Sweet red pepper - 1 pcs.

Prepare vegetables for Lenten shawarma at home. Cut sweet peppers and pickled cucumbers into thin strips. Cut the tomatoes into thin slices, chop the Chinese cabbage, chop the parsley.
To make French fries, peel the tubers and cut into thick strips. In a saucepan, bring vegetable oil for deep frying to a boil. Place potatoes in oil and fry for 3-4 minutes. Remove the fries with a slotted spoon and drain on a plate with a paper towel to remove excess oil and season with salt.
To assemble Lenten shawarma, spread one sheet of pita bread on a work surface. In a bowl, mix ketchup, lean mayonnaise and chili sauce to taste. Brush half the sheet with the prepared sauce, not reaching 5 cm from the edges.
Place a layer of Chinese cabbage on the sauce, then slices of tomatoes, pepper and cucumber strips. Place fries on top. Sprinkle with parsley.
Fold the edges of the pita bread, not smeared with sauce, over the filling, then carefully roll everything into a tight roll. Repeat process with remaining 3 pita sheets and filling. You will get 4 rolls.
Heat a little vegetable oil in a frying pan and fry the prepared rolls one by one on all sides until golden brown. Transfer to plates and cut each Lenten shawarma in half.
