Want some pies but no time to make the dough? Prepare lazy cabbage pies with kefir without yeast. You don't even need an oven; you can quickly fry them in a pan. This recipe is a real lifesaver for busy people. The ingredients are very simple, it doesn't take much time, and the result is delightful—quick fluffy golden pies on the table. They are perfect for a snack or dinner, you can take them to work, and they can successfully replace a main dish for lunch. And in the summer at the cottage, you can serve them from morning till evening!

Kefir - 350 g

Sugar - 1 tsp.
Salt - 1 tsp.
Baking soda or baking powder - 1 tsp.
Vegetable oil for frying - 1 tbsp.

White cabbage - 400 g
Carrot - 1 pcs.

Prepare the filling for lazy cabbage pies. Grate the carrots on a coarse grater, finely chop the onion. Cut the cabbage into small cubes; this cutting is more convenient for filling pies.
Heat a little vegetable oil in a frying pan. Fry the onion for 3 minutes, avoiding burning. Add the carrots to the onion and cook, stirring, for another 5 minutes.
Add cabbage to the pan, mix with onions and carrots, fry for 5 minutes, stirring constantly. Reduce heat, pour in 2-3 tbsp. spoons of water, cover and simmer the cabbage until soft for 15-20 minutes. Finally, salt and pepper the filling. Let it cool.
Knead the dough for pies. To do this, mix kefir and soda with a whisk in a bowl. It should foam. In another bowl, beat eggs with sugar and salt. Pour the egg mixture into the kefir and stir.
Add sifted flour little by little to the kefir mass, continuing to stir with a spoon. You should get a viscous dough of medium thickness, a little thicker than for pancakes.
Add the cooled cabbage filling to the prepared dough, mix thoroughly with a spoon so that everything comes together into a relatively homogeneous mass. Let the dough rest for 15 minutes.
Heat a lot of vegetable oil in a frying pan. Using a tablespoon, place the dough into the pan, giving it a round or oval shape. Fry lazy cabbage pies on both sides until golden brown, turning once. Be careful not to burn. Add oil to the pan for each new batch of pies.
Using a slotted spoon, transfer the finished lazy cabbage pies to a plate lined with paper towels to remove excess oil. Serve the pies warm.
