Tsvetaeva's blueberry pie is the best option for a filled pie. And this pie is not only good for its poetic name but also for its excellent content. It is based on a thin and crumbly crust that encases juicy berries and a tender sour cream filling, reminiscent of airy soufflé. Each slice of the pie offers a magnificent combination of textures and a rich, vibrant taste. The recipe does not include complicated ingredients, and besides a good oven, you will only need fresh or frozen blueberries, excellent sour cream, and an hour of time. Preheat oven to 175°C. Place a rack on the middle level. Grease an ovenproof springform pan with a diameter of 26 cm with butter and dust with flour. While tilting the pan, spread the flour over the entire surface of the pan and shake off any excess.
Prepare the berries. Sort through fresh blueberries, remove unusable berries, twigs and leaves. Rinse the berries and place them on a towel. The berries must be dry so that the sour cream filling does not become too liquid.
Place the prepared blueberries in a bowl, sprinkle with starch and stir gently with a spatula. Try not to deform the berries, otherwise they will release juice, which will color the sour cream filling.
Place the butter in a small saucepan and melt over low heat. Remove from heat and cool slightly. You can melt the butter in the microwave or in a water bath. Pour the oil into a large bowl.
Pour the sugar into the bowl with the melted butter and stir the mixture thoroughly with a spatula or mixer until the sugar has dissolved. Add baking powder and mix again.
Add the flour to the butter mixture and start mixing with a mixer or spatula until the ingredients are combined. Finally knead the dough with your hands. Gather the dough into a ball, wrap in cling film and leave on the work surface for 10 minutes.
Prepare sour cream filling. Combine sour cream with regular and vanilla sugar, add eggs and flour. Mix the mixture thoroughly with a mixer until smooth. Try not to leave any lumps of unmixed flour in the mixture.
Roll out the dough into a thin layer to fit the mold. To avoid adding excess flour, roll out the dough on a sheet of baking paper. Carefully transfer the dough into the pan. Press in the corners, form high sides.
Place blueberries in prepared pan with batter. Pour in the sour cream mixture. Tap the bottom of the pan on the counter to distribute the filling evenly. Place the pie in the oven and bake for 1 hour.
Remove the finished pie from the oven and leave in the pan for at least 1 hour. The filling and crust should thicken. Carefully remove the side of the pan, transfer the pie to a flat plate and refrigerate for 1-2 hours.
