About This Recipe

Ranginak is a dessert with dates and nuts that comes to us from the Middle East, specifically from Iran. It is said that this dish is one of the oldest, as evidenced by written sources. The essence of the dessert is simple: its base consists of dates stuffed with nuts, which are then covered with a fried buttery-flour mixture, seasoned with cinnamon and saffron. Muslims prepare ranginak quite often, especially during the holy month of Ramadan, and usually in large quantities, especially since this dessert keeps well in the refrigerator for 10-14 days.

Preparation Steps

Step 1

Prepare all ranginak ingredients. Remove pits from dates. To do this, simply push them down one side of each fruit with a cocktail straw.

Cut the walnuts into small pieces and stuff the dates. Place on a large plate, beautifully arranged in a circle or in sectors of a circle, as convenient. Try to do this as tightly as possible so that there is no free space left. The ranginaka base is ready.

Pour flour into a dry frying pan. Fry it, stirring constantly, over low heat until golden brown. Add ground cinnamon, saffron and stir. Place butter in a frying pan and pour in vegetable oil. Stir again.

Cook the mixture over low heat with constant stirring for 10–15 minutes. Remove from heat. Pour the resulting mass over the dates, distributing it as evenly as possible.

Leave the ranginak for 10 minutes. Crush the pistachios in a mortar. Sprinkle the finished dessert with pistachios and coconut flakes. Serve.
