Tofu cheesecakes are a true paradise for vegans or those fasting: they contain neither cottage cheese nor eggs. Advocates of healthy eating will also appreciate the minimal "sweetness" of the dish (banana plus Jerusalem artichoke syrup) as well as the absence of wheat flour in the recipe. Despite all this, the cheesecakes, or tofu cakes, as they are also called, turn out to be very tasty and do not raise any questions among the "omnivorous" household members. What should you serve with this dish? We think it's necessary to "maintain the standard," so no sour cream or condensed milk: fresh berries or fruit puree to taste.

Prepare ingredients for cheesecakes. Rinse the raisins and soak in warm water for 10 minutes. Peel the banana and cut as desired. Cut the tofu into cubes.
Place tofu and banana in a bowl. Pour in Jerusalem artichoke syrup and lemon juice. Add salt and blend with an immersion blender until the mixture has a homogeneous consistency.
Add 1 tablespoon rice flour. Blend the mixture again with a blender. Dry the raisins well with a towel. Add to the cheesecake dough and mix thoroughly with a spatula.
Sprinkle the remaining flour onto the board. Place a large frying pan over medium heat, pour a little vegetable oil into it and heat it. Take a tablespoon of dough and form a cheesecake, rolling it in flour. Prepare the rest in the same way.
Place the cheesecakes in the pan. Close it and fry over medium heat until browned on one side. Then turn over and cook covered for about 5 more minutes. These cheesecakes can be served with fresh berries and any syrup.
