About This Recipe

Crispy crust and tender flesh inside—this miracle is called lazy potato pies. They differ from classic pies in that the filling is incorporated into the dough—mashed potatoes mixed with flour and other ingredients. And the result exceeds all expectations! The dough turns out fluffy and airy, and the pie itself is firm and golden on all sides because it's fried in oil in a pan. It looks very much like the little bread bun from the famous fairy tale. Since the dough contains yeast, it needs an hour to rise. Otherwise, these pies are quick to prepare and just as quickly eaten.

Preparation Steps

Step 1

To make the dough for lazy potato pies, first prepare mashed potatoes. To do this, wash the tubers, place them in a saucepan, cover with cold water and cook until tender, about 25 minutes. Then cool, peel, transfer to a large bowl and mash into a puree.

In a small bowl, mix kefir with egg with a fork, add sugar, salt and pour this mixture into mashed potatoes. Mix everything thoroughly with a spatula until smooth.

Pour sifted flour and dry yeast into the mashed potatoes with kefir in portions, mix everything with a spatula and then with your hands. Add vegetable oil and dried herbs, knead into a soft dough. Roll into a ball.

Grease a bowl with vegetable oil, place the dough, cover with film and leave warm for 40-60 minutes. The dough for lazy potato pies with kefir should not rise much, it will only increase slightly in volume.

Place the finished potato dough out of the bowl onto a floured work surface and divide into three parts. Roll each part into a sausage and cut into small portions.

Roll the pieces of dough into balls, dipping them in flour, and knead them with your hand into thick cakes. You should get 18-20 cakes. Cover the tortillas with cling film for 15 minutes.

Heat a lot of vegetable oil in a deep frying pan. Place the tortillas in portions in boiling oil and fry until golden brown on one side, then turn over with a spatula and fry on the other side. The pies will increase in volume.

Remove the fried potato pies from the skillet to a plate lined with paper towels to remove excess vegetable oil. Serve hot.
