Try making cheese breadsticks using our versatile dough recipe. The breadsticks turn out golden, crispy, and very tasty. They are easy to prepare, store well, and are loved by everyone from young to old — in a word, a find! These sticks are usually served in a large glass or bowl placed in the center of the table. They go well with soup or salad, hummus, or just with olive oil flavored with salt and spices. A little tip: since the dough is versatile, you can also make pies, crackers, and tartlets from it.

Pre-cool the butter for the dough and cut into cubes. Mix the flour with salt and rub together with the butter into crumbs with your fingertips so that it resembles breadcrumbs. You can do this in the bowl of a food processor, turning it on in pulse mode, or with a mixer using the paddle attachment. The crumb should be homogeneous.
Add the egg, yolk and sour cream to the flour crumbs, mix. Gradually pour in cold water mixed with lemon juice. Add just enough so that the dough stops crumbling and can be kneaded. There is no need to knead the dough thoroughly, as this will make it rough.
Divide the dough into 300 gram portions, place in separate bags and place in the refrigerator for at least 30 minutes to allow the butter to cool and the moisture to be evenly distributed.
Remove the dough from the refrigerator and roll out into a rectangular layer 3 mm thick. Sprinkle with cheese and black pepper, fold the layer in half and roll out again to the same thickness.
Cut the dough into strips 1 cm wide, sprinkle with water from a spray bottle, sprinkle with cumin, poppy, sesame or flax seeds - to taste. Roll with a rolling pin to help them stick better.
Twist the strips into a spiral and place on a baking sheet lined with baking paper. Bake in an oven preheated to 180°C for 10-12 minutes until the sticks are lightly browned and crisp.
