Greens have appeared—add them to all dishes. For example, lazy pastries with eggs and green onions. When there are no ground vegetables yet, onions are already begging to be on the table. Moreover, not only in salads but also in soups and as a filling for baked goods. In pastries, onions lose their sharpness and pungent smell but retain vitamins A and C, which strengthen immunity and help maintain beauty. Our grandmothers didn’t spare their effort and time and made spring treats with onions and eggs from yeast dough. But we are looking for quicker and yeast-free options so that everything can be mixed and—voila—into the frying pan! And such recipes do exist. Take note of them.

Preparation Steps

Step 1

First, prepare the filling for the lazy pies. To do this, place eggs at room temperature in a pan of cold water, bring to a boil and cook for 10 minutes. Drain the hot water and cool the eggs under running cold water. Peel and finely chop.

Dry the prepared green onions on a paper towel and finely chop. Combine onion and chopped eggs in a bowl, lightly salt and mix. The filling is ready.

Knead the dough for lazy pies with kefir. Pour room temperature kefir into a bowl, add a fork-beaten egg, vegetable oil, salt, sugar, and mix.

Pour the sifted flour and baking powder into the kefir mass. Stir constantly with a spoon. The dough should be thicker than for pancakes. If necessary, add more flour. Cover the bowl with the dough and let it rest for 10 minutes.

Add the prepared filling of green onions and boiled chopped eggs to the kefir dough for lazy pies, mix everything carefully with a spatula or spoon.

Heat vegetable oil in a frying pan. Take two large spoons - one to take the dough from the bowl, the other to help remove it to the pan. Form thick cakes directly in the pan and place them at some distance from each other, as they will increase in volume when frying.

Fry the pies first on one side until golden brown, then carefully turn them over with a spatula and fry on the other side over low heat, avoiding burning.

Add a little oil to the pan with each new batch of pies. Transfer the finished pies to a plate. Serve any time of the day as a hot appetizer.
