Preparation Steps

Step 1

Prepare carrot filling. Grate the peeled carrots on a coarse grater. Melt the butter in a deep frying pan or saucepan. Place carrots and add sugar.

Cover the saucepan with a lid and cook the carrots over low heat for 10 minutes. Stir several times, being careful not to let the carrots burn. In a separate bowl, mix the cream with cornstarch and vanilla sugar.

Pour the cream mixture into the skillet with the carrots. Cook over medium heat, stirring constantly until the filling thickens. This will take approximately 1.5-2 minutes. Remove from heat and cool.

Prepare yeast dough. Heat the milk to a temperature of 30-32 °C and pour into a large bowl. Add the egg, salt and sugar and mix with a whisk or mixer until smooth.

Pour dry yeast into the milk mixture, stir again and leave in a warm place for 10 minutes. During this time, the yeast is activated and a light foam appears on the liquid. Pour in vegetable oil and add flour.

Knead soft dough for carrot pies. If the dough sticks to your hands, add another 1-2 tbsp. l. flour. Form the dough into a ball, place in a bowl and cover with cling film. Leave on the work surface for 1 hour.

The dough should approximately double in volume. Punch down the dough, cover again with film and leave for another 30 minutes. During this time the dough will rise again.

Dust your work surface with flour and place the dough on the counter. Knead again with your hands and form a sausage with a diameter of 3 cm. Cut it into pieces 3 cm long. Roll each into a neat ball.

Preheat oven to 190°C. Line a baking tray with baking paper or simply grease it with vegetable oil. Roll out the dough balls into flat cakes 5mm thick.

Place 1 tbsp in the middle of each flatbread. l. fillings. Pinch the dough tightly, starting from the middle and working towards the ends of the pie. Place the pies on a baking sheet, leaving a distance of at least 2 cm between them. Cover the pies with a towel and leave to proof for 15-20 minutes.

Beat the yolk with 1 tbsp. l. water or milk. Using a pastry brush, brush the tops of the pies with the yolk mixture. Place the baking sheet on the middle rack of the oven.

Bake the pies until golden brown, about 20-25 minutes. Transfer the finished pies to a wire rack, cover with a towel and cool slightly. Serve as a dessert or snack.
