Chinese-style fried rice can be enjoyed in all Asian restaurants. The recipe is very simple, and the ingredients are so well-balanced that one serving of the dish will give you the necessary energy supply for the whole day! For a light dinner, this fried rice with egg is also a great fit — it won't leave you feeling heavy in your stomach. Prepare the dish in a heavy skillet with high sides and stir with a spatula until the eggs are cooked. However, don't try to break them up too much — the taste will be more interesting if there are fairly large pieces of omelet in it.

Pour the rice into a small ladle, add 1 tsp. olive oil and 1 tsp. lemon juice and fry over medium heat for 2 minutes. Pour in 400 ml of hot water, reduce the heat to minimum, cover the pan with a lid and cook the rice for 12-14 minutes.
Pour boiling water over green peas and leave for 5 minutes. Cut the bell pepper lengthwise, remove the seeds and membranes, and cut the halves into small cubes. Cut the tomato into the same cubes. Chop the green onions into 1 cm long pieces. Chop the garlic.
Crack the eggs into a large bowl, add soy sauce, a small pinch of salt and freshly ground black pepper. Beat the egg mixture with a whisk until smooth. Add prepared vegetables and stir.
Heat the remaining olive oil in a frying pan over medium heat and pour in the omelette mixture. Reduce heat to low and cook omelet 3 minutes. When the bottom is set, use a spatula to stir the omelette until it breaks up into small pieces. Continue cooking for another 2 minutes.
Add boiled rice to the pan and stir gently with a spatula. Pour in sesame oil and stir again. Cover with a lid and leave for 1 minute. Divide the egg fried rice into bowls and serve immediately.
